When we think of eating fettuccine shrimp scampi the first thing that usually comes to mind is a meal packed with a lot of calories. That is unless you replace the noodles with zero calorie pasta.
Now all you have to count are the remaining ingredients that you place into the meal. So although I share with you my version of making fettuccine shrimp scampi never is afraid to switch out an ingredient that you feel is a better alternative for you. So say that I use butter maybe you prefer, olive oil, coconut oil, margarine or even some other special version of a healthier fat, then by all means switch it out. It is all about creating a meal that fits your palate and your waistline. I am just here to share my own creations in the kitchen to make your dinner table a little more enjoyable tonight. So let us begin sautéing.
First let us gather all of our ingredients together.
2 bags of angel hair pasta by miracle noodle, also known as shirataki noodles
You will need one full pound of prawns or shrimp. You will want to make sure that they are peeled and deveined too.
First we are going to make our sauce for the shrimp scampi. For that we will need the following items.
6 cloves of garlic that is minced with a garlic press
4 scallions diced thin, I like to include the green tops too
2 Tablespoons of fresh or dried parsley
2 Tablespoons of fresh or dried basil
2 Tablespoons of fresh or dried oregano
1 large lemon
1 cube of butter or 1 cup of oil like olive or coconut oil
Get a nice sized fry pan place in the butter or oil, next you will want to add in the garlic and the onion. Once they brown which just takes a couple of minutes toss in the shrimp. Now squeeze in the juice from the whole lemon. Begin adding in the basil, parsley and oregano. If you enjoy salt pepper now would be the time to toss that on too. Once the shrimp are cooked you will toss it all together in a large bowl and serve up with a nice salad or some garlic French bread.
As a side note the shirataki noodles angel hair pasta should be dunked into a pot of boiling water for two minutes just to heat and remove the fermented smell. Then have it ready to mix with the sauce and the shrimp with the directions that are above. This should serve four people very nicely. If you have more or less people to feed then just adjust the recipe accordingly. It is time to start bringing noodles back into our diets with this fettuccine shrimp scampi recipe.
